Oatmeal Raisin Cookies

Ingredients

1 Cup Raisins.

1 Cup Hot Water.

¾ Cup Room Temperature Unsalted Butter

1 Cup Packed Light Brown Sugar

1 Large Egg

1 ½ Teaspoons Vanilla Extract.

¾ Cup All-Purpose Flour

½ Teaspoon Baking Soda

½ Teaspoon Salt

½ Teaspoon Ground Cinnamon

½ Teaspoon Ground Nutmeg

3 Cups Old-Fashioned Rolled Oats

Directions

  1. Heat oven to 350°F. Line two baking sheets with parchment paper.

  2. Add raisins to a small bowl then cover with hot water. The hot water helps the raisins become plump - set the bowl aside for 10 minutes.

  3. In a large bowl, beat the butter and sugar with a hand mixer or stand mixer with a paddle attachment until creamy - for about 2 minutes. Add the egg and vanilla extract then beat until combined - about 1 minute.

  4. In another bowl, use a whisk to combine the flour, baking soda, salt, cinnamon, and nutmeg. Next, add the oats then stir until well combined. Add the oat mixture to the butter and sugar mixture slowly.

  5. Drain the raisins and stir them into the cookie batter - use a spatula for this.

  6. Drop dough by 2 tablespoonfuls about 2 inches apart. Then, wet the tips of your fingers and gently press the cookies down until they are about ½ inch thick.

  7. Bake for 10-15 minutes or until the edges are light golden brown and the center is a bit soft. Cool the cookies down for 10 min.
